Pineapple jam is drier than berry jams but it is delicious! Pineapple does not lend  itself to making jam as there is an enzyme in it that does not work with pectin. This jam is full of pineapple pulp and has loads of pineapple taste, unlike some ‘pineapple jam’ that actually is a jelly. This recipe is also versatile as it can be made more spreadable by reducing the simmering time. In the olden days, pineapple cooked this way (with more liquid) was used as an ice cream topping.

This jam is ideal for making pineapple jam tart, a favorite tart in Malaysia. These pineapple jam tarts are popular during Chinese New Year and Eid-al Fitr.

Here’s a recipe that will dress up your macarons for any festive occasion – Peppermint Macarons! It’s actually quite easy to get that ‘swirly tie-dyed’ effect on macarons. All you do is paint two thin lines of dye inside your piping bag before adding the batter. When you squeeze the piping bag, the batter comes out in colorful swirly lines. You can also add a few sprinkles on top for decoration.

The Peppermint Buttercream filling gives a nice refreshing flavor to the macarons. So easy to make with softened butter, confectioner’s sugar and a little milk.

Opera Cake is a rich French dessert.

Opera Cake is filled with French coffee buttercream, and chocolate ganache, stacked between almond and meringue sponge cake (known as joconde). Finally, the Opera Cake is coated in chocolate glaze.

I was looking for more coffee-flavored desserts after discovering Tiramisu. This is a much-loved Italian dessert with a coffee flavor. After tasting Opera Cake, I realized how well coffee and chocolate go together. It is a match made in heaven. Like Tiramisu, this beautiful cake has layers…cream filling layers and more…

Refrigerate the cake for 2 hours or overnight before glazing. You can chill it for up to 1 day, so it’s a great make-ahead dessert recipe!

This Peanut Butter Fudge recipe was my mother’s family favorite. She made this often, usually per request. It is a simple old-fashioned peanut butter fudge recipe that if cooked to proper soft ball stage is fabulous. Made with a few simple ingredients, this is deliciously addictive. It also makes a great hostess or holiday gift. Wrap in wax paper and tie with a pretty bow. Peanut butter lovers will be overjoyed. The Himalayan Pink salt is the finishing touch.

These moist and deeply chocolate brownies have a light, rather elegant melt-in-your-mouth texture. Teff flour has a nuance of cocoa flavor to start with, so it is a natural choice for brownies. If you need something dressier than brownies, bake the batter in a 9-inch round pan and serve wedges with whipped cream — and perhaps a scattering of seasonal berries — and call it dessert. Either way, the recipe comes together quickly and the results remain deliciously moist for a few days.

The batter for these marvelous crunchy cookies is made in one small nonstick pan and may be cooled and refrigerated overnight.

A great task for kids, the cooled batter can be rolled into small balls. Place the balls well-spaced on a cookie sheet and they will bake into flat cookies that will crisp as they cool. The finished cookies may be served plain, or edged with melted chocolate and sprinkles or nonpareils, or sandwiched together with a jam filling before edging with dark or white chocolate.
