I love smoked salmon.  It’s tasty, works well for low fat and low carb diets, and it’s so versatile in salads, on Eggs Benedict for brunch, thrown in some scrambled eggs, or in any of a myriad of appetizer applications.  One of  my absolute favorite appetizers is also one of the easiest.  Another benefit of this smoked salmon spread is that I can keep it low carb for myself by using veggie dippers and appease the non veggie lovers with assorted crackers.

Smoked salmon salad and avocado toast make for a fantastic weekend brunch, especially if you’re watching carbs.   I love fresh spinach, especially in the spring.  Its vibrant green makes me excited as I anticipate the fresh veggies that will soon be available again at my local farmers’ market.  For this smoked salmon salad and avocado toast, I used the veggies I had on hand, but feel free to swap out for others if there is something you don’t like.

Make the two dressings ahead of time. The great thing about these is the recipes leave extra for later meals. For example, I made a creamy shrimp salad with poached shrimp and the Goddess dressing.  My youngest kiddo likes to dip veggies in it and also uses it for a sandwich spread.

The pickled daikon, which is optional for the salad, needs to be made a day or two in advance. I fell in love with this daikon when my son brought home some Korean fried chicken, which had pickled daikon on the side.  I get my daikon from a nearby large Asian market. As with the dressings, I always make extra so I have some on hand for later meals during the week.

The recipe for smoked salmon salad and avocado toast serves two, but is easily multiplied.

For a recipe that is both healthy and quick n’ easy, Mediterranean Stuffed Salmon is just right. Face it, between a busy lifestyle and chores, who really feels like cooking all the time?  Not me!  On those days, I’m always looking for something quick to make. Add simple vegetables to Mediterranean Stuffed Salmon and you’ve not only got yourself a healthy meal but a hearty one as well.  And if you are feeding others, they will leave the dining table very pleased.

Mediterranean Stuffed Salmon can be made on the grill, in the oven, or on the stove top. I prefer the stove top because it cooks so quickly.  I recommend using a cast iron skillet for this dish as it can bear high heat, which you will want to for creating crispy skin.

Succotash and pan-seared cod make a light meal for hot summer days. Technically it’s not carb free, but all things considered, lima beans and corn are better than mashed potatoes and gravy or a creamy pasta dish. In this recipe, frozen vegetables are preferable over canned or dried, but fresh vegetables in succotash will yield the best result and also reduce your cooking time. If you like things on the spicy side, consider adding red pepper flakes or hot sauce to the succotash.

Your choice of pan is crucial to the success of searing the cod. Weight and heft are important, and if you have a reliable cast iron or stainless steel sauté pan, by all means use it, but most people need to use a non-stick pan to keep the filet intact.

My husband always made mussels but I wanted to give it a go. I looked online and in a couple of cookbooks to get ideas of what to put in the recipe. I decided to blend the traditional white wine broth and the heartier ones I found, plus, I wanted to use what I had on hand.

Beer, half n’ half, and fire roasted tomatoes seemed to make sense. I also used up all my garlic and parsley…thus the amounts shown in the recipe. These turned out great!  I am saving the leftover sauce as a base for a salmon soup or stew. Yum.

P.S. My husband will not be making the mussels again!

Seared Ahi Tuna with Mango & Sesame-Ginger Sauce is a tasty dish with a balance of color, texture and flavor.

Raw tuna is that special ingredient in our family. It’s firm and has virtually no”fishy” taste to me. It reminds me of a perfectly cooked steak. Never mind that it’s rich in omega-3 fatty acids which make it extremely healthy. We love the flavors of Asian cuisine so adding sesame seeds not only protects the tuna during the sear it also adds a nuttiness to the dish. Pair that with the sauce and you create layers of flavor. And to balance out all the richness and saltiness, I like to add a bit of sweetness. In this case it is the mango and red pepper which also provide a beautiful color contrast.
