Adding chili powder is optional and blending is not required.  You can also serve Chunky Tomato Soup as a first course. In case you opt for a light meal, the soup can stand alone with the addition of a few breadsticks or slices of toasted sourdough bread . Pancit Molo is a Filipino pork dumpling (wonton) chicken soup originating in the Western Visayas region of the Philippines. The recipe is influenced by the large community of Chinese people living in the town of Molo in the province of Iloilo.

The “dumplings” (molo) in this soup are wontons filled with seasoned pork and egg. I like the dish because it’s Filipino-Chinese rolled into one, like my origin. I was born and raised in the Philippines with a pure Chinese father and a half Filipino, half Chinese mother.

I eat this soup summer or winter with bread. My tip is to sprinkle white pepper while it’s hot before eating to add more flavor and spiciness.

I was discussing favorite breakfast foods with a friend. Some of my favorites are Eggs Benedict, waffles, and shakshuka. My friend grew up in Turkey and suggested I try menemen, a dish she described as shakshuka’s cousin. It’s tasty, healthy, hearty, full of flavor, and fun. It’s not a difficult dish, but it takes a bit of time so I only serve it on weekends. I prepare the food, give everyone a plate, take the whole skillet to the table, and it’s a breakfast buffet free-for-all. Menemen is typically served with thick-cut bread but I serve it with a brand of grain-free tortilla chips that my family loves.

I’m married to a Romanian and have found that vegetable bouillon comes in handy for soups, ciorba, borscht and broths, even stews. I call it a hearty soup packed into a block. Vegetable bouillon is easy, comforting, and filling with home baked bread, and these concentrated blocks take less space in the freezer than fully prepared soups.

CIORBA: Romanian Meatball Soup

You can use any vegetables except potatoes, which don’t freeze well. I have made suggestions for the proportions of the vegetables, but what you choose is entirely up to you. Parsnips are sweet, and leeks and kohlrabi will add rich flavor. If you can’t get fresh turmeric it’s okay – the carrots will provide a warm yellow color – but do NOT use turmeric powder. Your soups will then taste like curry. Trust me on this, unless you don’t care.

I make lots of Romanian ciorba, hence the usage of lovage and dill in my vegetable bouillon.

For a fast soup on cold evenings, all you need to do is pop one or two vegetable bouillon squares into the pot with water or stock, and add meatballs, dumplings or potatoes. If you feel like it, you can add extra vegetables. But when the temperature is minus 20 degrees Celsius (minus 4°F) I don’t want to muck around in the kitchen, I want something easy, hearty and comforting.

Technically it’s not carb free, but all things considered, lima beans and corn are better than mashed potatoes and gravy or a creamy pasta dish. In this recipe, frozen vegetables are preferable over canned or dried, but fresh vegetables in succotash will yield the best result and also reduce your cooking time. If you like things on the spicy side, consider adding red pepper flakes or hot sauce to the succotash.

Your choice of pan is crucial to the success of searing the cod. Weight and heft are important, and if you have a reliable cast iron or stainless steel sauté pan, by all means use it, but most people need to use a non-stick pan to keep the filet intact.
