This Chunky Tomato Soup uses all natural ingredients with no preservatives.  All ingredients are readily available in your pantry. Adding chili powder is optional and blending is not required.  You can also serve Chunky Tomato Soup as a first course. In case you opt for a light meal, the soup can stand alone with the addition of a few breadsticks or slices of toasted sourdough bread . For a decorative touch, use a small cookie or biscuit cutter to cut shapes from slices of bread. After garnishing Chunky Tomato Soup with cilantro, float the bread on top just before serving.

I was discussing favorite breakfast foods with a friend. Some of my favorites are Eggs Benedict, waffles, and shakshuka. My friend grew up in Turkey and suggested I try menemen, a dish she described as shakshuka’s cousin. It’s tasty, healthy, hearty, full of flavor, and fun. It’s not a difficult dish, but it takes a bit of time so I only serve it on weekends. I prepare the food, give everyone a plate, take the whole skillet to the table, and it’s a breakfast buffet free-for-all. Menemen is typically served with thick-cut bread but I serve it with a brand of grain-free tortilla chips that my family loves.

This is the way I learned to make sauerkraut over a decade ago. The person who taught me made sauerkraut in jars, rather than a crock, to keep their small apartment from smelling like cabbage, and I find this method to be so easy (and to work so well in small spaces) that it’s become a go-to for me when I teach fermentation classes. You’ll need two pint jars with lids and bands for this method.

The recipe calls for Cajun seasoning, a spice blend with paprika, celery seed, garlic, basil, cayenne, white pepper, thyme and parsley.

Serve Cajun sausage stew with toasted crusty bread topped with butter and a dash or two of kosher salt.

I’m married to a Romanian and have found that vegetable bouillon comes in handy for soups, ciorba, borscht and broths, even stews. I call it a hearty soup packed into a block. Vegetable bouillon is easy, comforting, and filling with home baked bread, and these concentrated blocks take less space in the freezer than fully prepared soups.

CIORBA: Romanian Meatball Soup

You can use any vegetables except potatoes, which don’t freeze well. I have made suggestions for the proportions of the vegetables, but what you choose is entirely up to you. Parsnips are sweet, and leeks and kohlrabi will add rich flavor. If you can’t get fresh turmeric it’s okay – the carrots will provide a warm yellow color – but do NOT use turmeric powder. Your soups will then taste like curry. Trust me on this, unless you don’t care.

I make lots of Romanian ciorba, hence the usage of lovage and dill in my vegetable bouillon.

For a fast soup on cold evenings, all you need to do is pop one or two vegetable bouillon squares into the pot with water or stock, and add meatballs, dumplings or potatoes. If you feel like it, you can add extra vegetables. But when the temperature is minus 20 degrees Celsius (minus 4°F) I don’t want to muck around in the kitchen, I want something easy, hearty and comforting.

Poivronnade is a roasted red pepper spread that hails from the South of France (home to the ubiquitous olive tapenade). Poivrannade comes together quickly – make it early in the day, pop it in the fridge and carry on with the rest of items on your company to-do list.  It looks like you spent hours on it, it is visually pleasing, and it tastes great. That is hard to beat. Poivronade is delicious mounded on bite size pieces of pain au levain.

Smoked salmon salad and avocado toast make for a fantastic weekend brunch, especially if you’re watching carbs.   I love fresh spinach, especially in the spring.  Its vibrant green makes me excited as I anticipate the fresh veggies that will soon be available again at my local farmers’ market.  For this smoked salmon salad and avocado toast, I used the veggies I had on hand, but feel free to swap out for others if there is something you don’t like.

Make the two dressings ahead of time. The great thing about these is the recipes leave extra for later meals. For example, I made a creamy shrimp salad with poached shrimp and the Goddess dressing.  My youngest kiddo likes to dip veggies in it and also uses it for a sandwich spread.

The pickled daikon, which is optional for the salad, needs to be made a day or two in advance. I fell in love with this daikon when my son brought home some Korean fried chicken, which had pickled daikon on the side.  I get my daikon from a nearby large Asian market. As with the dressings, I always make extra so I have some on hand for later meals during the week.

The recipe for smoked salmon salad and avocado toast serves two, but is easily multiplied.

Face it, between a busy lifestyle and chores, who really feels like cooking all the time?  Not me!  On those days, I’m always looking for something quick to make. Add simple vegetables to Mediterranean Stuffed Salmon and you’ve not only got yourself a healthy meal but a hearty one as well.  And if you are feeding others, they will leave the dining table very pleased.

Mediterranean Stuffed Salmon can be made on the grill, in the oven, or on the stove top. I prefer the stove top because it cooks so quickly.  I recommend using a cast iron skillet for this dish as it can bear high heat, which you will want to for creating crispy skin.
